美国厨房刀具选购知识之钢材篇(一)

因为疫情的关系,许多人减少了外出就餐,开始在家烧饭做菜,这个时候,选择一把合适的刀具,不仅可以提升用刀安全性,更能提高做菜乐趣,与效率。本文将介绍在挑选刀具的时候,需要知道的信息,方便各位读者避免落坑。

钢材指标

硬度/Hardness

指的是材料遭受外界挤压的时候的抗变形能力,一般用「洛氏硬度」(HRC) 来测定。HRC 是一个绝对值,数字越大、硬度越高。我们在生活中也常使用浅显易懂的「莫氏硬度」来描述物体的相对硬度,将两种物体摩擦,看哪种物体上留下了摩擦印记;这张图片列举了部分常见材料的硬度。

厨房刀具的硬度,取决于钢材的配方。下面的几个表格,整理自刀具专业网站 “Knife Informer” [链接],包括硬度、韧性、耐腐蚀性、锋利保持度等。其中,硬度是最科学、最客观的指标,可以用专业机器来测试;对于厨房刀具来说,这也往往是衡量钢材好坏最重要的指标。

韧性/Toughness

刀具的韧性,是指砍击骨头等硬物时,不会折断、破裂的能力。断裂的刀具基本无法修复。钢材硬度越大、韧性越小;硬度越小,韧性越大。陶瓷刀具虽然硬度很高、很锋利,但是韧性极差,只能用来切割,不能用来砍剁,另外一般不能磨。

耐磨与腐蚀性/Wear & Corrosion Resistance

碳钢的硬度高于不锈钢,但耐腐蚀性则比不锈钢要低。碳钢和不锈钢的成分里都有铁。不锈钢中添加了铬,铬很容易与氧气结合、形成氧化铬层,从而防止铁与氧气结合。碳钢成分里通常没有足够的铬来形成氧化铬层,因此铁更容易与氧气结合,引起生锈。

  • 碳含量越高,越硬、越锋利,缺点则是更容易生锈、且磨刀更困难。
  • 相比之下,碳含量较低的不锈钢,硬度较低,但不容易生锈,磨刀更容易。

刀具都需要日常保养维护。虽然不锈钢耐腐蚀性要强于碳钢,但若长时间使用且没有正确的保养,不锈钢也会生锈。

锋利保持度/Edge Retention

指的是使用过程中刀具保持锋利的时间。不同用处的厨刀,可能会使用不同钢材,刃口角度的设计也不同。一般来说,钢越硬、刃口角度越小,越能更长时间保持锋利;钢越软、刃口角度越大,越无法保持锋利。15°左右的刀具非常锋利,适用于切片,锋利保持的时间也会比较长;刃口25°以上的一般为砍刀,刃口厚,适用于切砍骨头,厂家可能会选择1095等硬度较低、仍性较高的钢材,缺点是要经常磨刀。

钢材常见成分及作用

  • 碳(Carbon):提高硬度和耐磨耗性,降低强度。
  • 铬(Chromium):提高强度和锋利保持度,增强耐腐蚀性和耐磨性。
  • 钼(Molybdenum):提高可加工性和强度。
  • 锰(Manganese):增加硬度和脆性。
  • 氮(Nitrogen):提高强度和锋利保持度。
  • 硅(Silicon):提高强度。
  • 磷(Phosphorus):增加强度。
  • 硫(Sulfur):提高可加工性。
  • 钒(Vanadium):提高耐磨性和淬透性。
  • 钴(Cobalt):增强其他成分的效果。

常见钢材与对应的厨房刀具

下面我们介绍厨房刀具常见的一些钢材。我们首先用中国品牌「苍山」Cangshan 作为例子,原因:

  • 这是一个知名品牌。Amazon 上有些没听说过的品牌,号称用的是 VG10,但很多人评论表示不信。如果你看中的是「好钢」,那么建议选择知名的品牌,因为你基本上要 “take their word for it”,没法自己验证钢材成分。Costco 也有出售 Cangshan 刀具,这也是我觉得 Cangshan 可靠的原因之一;不过 Costco 所有的东西都是量大、价优、选择少,你要在 Costco 买 Cangshan 或其他品牌的刀具,就那么几个选项。
  • Cangshan 用的都是「进口」钢材,价位则没有其他德系和日系大品牌那么高,性价比不错。
  • Cangshan 刀具,大部分都在刀身上注明了钢材和硬度,而有些品牌我们查半天都不知道。

德国 X50CrMoV15 (HRC 58±2)

德国钢材,成分包括0.55%碳、15%铬、0.8%钼、1%锰、1%硅、0.04%磷、0.015%硫、0.20%钒;总体来说高铬、碳和钒,因此具有良好的硬度、韧性和耐腐蚀性。X50CrMoV15 没有常见的日本钢那么硬,用这种钢材制作的刀具刀刃角度往往偏大,没有日本刀具锋利,但优点是更容易维护保养,在防锈、韧性、保刃性和成本之间的找到了很好的平衡,是厨房刀具常用的钢材。

Cangshan 的 V2、H1、N1、S1、N、W、X、R、D 等系列用的钢材都是 X50CrMoV15,点击打开大图即可很清晰地刀身有标注,包括硬度 HRC 58±2。我们下面都用最常见的8英寸主厨刀来对比,这样大家可以对比不同钢材的价格变化。

描述里的 “full tang” 指的是刀身与整个刀把一体成型。有些设计把整个金属刀把露在外面,如下面的苍山 N1 系列,而更常见的设计是在刀把外包裹木头或工程塑料,这样做的好处主要是加强握抓力度,不容易打滑;另外,如果是全金属刀把,可能会导致刀把的重量远远超过刀身、重心太往后,估计是因为这个原因,苍山 N1 刀把镂空,减轻了刀把的重量。

与此相对应的是 “half/partial tang” 或 “hidden tang”,即刀把只有一半左右的长度是与刀身连在一起的金属,或者说,是把刀身浅浅地插在木头刀把里,这样的风险是:当你用力砍剁的时候,刀把可能断裂、甚至整个刀身都会飞出去。

知名品牌的厨房用刀,我见过的基本都是 full tang;如果你预算有限,只是随便买把不知名的厨刀,应该留意一下是否为 full tang。

德国刀厂很少把钢材类型标示在刀身,不过我们查找之后,基本可以确定,德国的三叉牌(Wüsthof)除了Silverpoint系列;双立人(Zwilling J.A. Henckels)除了 1731, Miyabi, Twin Cermax 和 Damask 系列外,都使用了 X50CrMoV15。国内品牌「十八子作」的一些刀具也是使用 X50CrMoV15。

产品描述里虽然没有,但在 Q&A 里面很多人提到钢材是 X50CrMoV15;价格比苍山贵很多。

瑞典钢 12C27 (HRC 58±2)

这是瑞典 Sandivk 公司生产的入门级不锈钢,常用于厨房刀、狩猎刀、钓鱼刀、冰刀等。成分含0.6%碳、13.5%铬、0.4%锰:、0.4%硅、0.03%磷、0.03%硫。与低端钢相比,它的含碳量略高。苍山的 TG 系列用的是 12C27。

瑞典钢 14C28N (HRC 59±2)

14C28N 也是由瑞典 Sandivk 公司生产。相比 12C27,它的碳和铬含量都更高,具有更强的硬度和耐腐蚀性。成分包括:0.62%碳、14%铬、0.11%氮、0.6%锰、0.2%硅、0.025%磷、0.01%硫。14C28N 的硬度在 HRC 59左右,比常见的德国的钢材硬、比常见的日本钢软。苍山的 TS、 TV、 TV2、 TN 等系列使用的是 14C28N,定位比上面使用 X50CrMoV15 的系列要高(贵),但是比使用日本钢 VG10 的要便宜。

我正在用的苍山 TN 系列

TN 系列和上面提到的 N1 采用了不同的钢材,外观则一模一样,获得了2016年德国红点设计大奖。我现在用的就是上图的苍山 TN1 八件套,包括8" 主厨刀、7" 三德刀、8" 面包刀、8" 磨刀棒(honing steel)、5" 锯齿多用途刀、3.5" 削皮/水果刀、可拆卸式多功能厨房剪刀、胡桃木刀盒。

  • 优点:非常锋利,开封之后,轻松可以做到单手切纸,跟下面这个网上找的动图一样。
  • 优点:刀身和刀把都是不锈钢一体成型。普通的刀把,如果材料或做工不佳,长年使用之后,接缝处可能藏污纳垢不好清理,刀把还有可能变形甚至脱落,这个系列完全没有这种担心。
  • 缺点:不锈钢刀把摩擦力较小,如果手上或刀把上有水,要先把水擦干,否则可能握不牢。
  • 缺点:不锈钢刀把是「指纹收集器」,相比木头和工程塑料的刀把,需要更仔细擦干净。

买之前我担心刀把扁平、中空,握感可能不佳,不过收到之后发现握在手里的感觉还蛮舒服。

VG-10 (HRC 60±2)

VG-10 是日本武生特钢公司(Takefu Special Steel Co. Ltd)研发专门用于刀具的钢材,是最受欢迎的日本高端钢材之一。其碳和钒含量高,高硬度(经过热处理后硬度可达 HRC 60-62)、耐腐蚀,在刃口强度、锋利度持久性等方面都比较平衡。成分含1.05%碳、15.5%铬、0.5%锰、0.03%磷、1.2%钼、0.3%钒、1.5%钴。

VG-Max

与AUS系列钢材一样来自日本,是日本武生特钢公司(Takefu Special Steel Co. Ltd)研发的一种专门用于刀具的钢材。经过热处理后硬度HRC可以达到60-62。VG-10的刃口强度,保持性,锋利度持久,都比较平衡。其钢材由1%的碳、15%的铬、1.5%的钴、1%的钼、0.5%的锰和0.2%的钒制成。在VG-10的基础上,他们在VG-Max中加入了更多的碳来提高强度,更多的铬来提高耐腐蚀性和耐磨性,还通过添加更多的钨和钒提供碳化物,使钢的颗粒更加细密。美国市场上使用VG-10/VG-Max钢材的厨刀是来自日本的“旬”(SHUN),价格略高,如果刚入门,想体验VG-10钢材,可以考虑购买“藤次郎”Tojiro的刀具,同样是日本十大刀具厂商,性价比更高。

440C

来自美国的马氏体型不锈钢。含碳量1.0%,含铬量16-18%。抗锈能力强,属于中端钢材,钢材价格较低硬度不高,韧性好也防锈。硬度HRC在50-55。440C钢材制成的刀具需要经常保养,磨刀来保持锋利。随着市场上更好的钢材出现,消费者也有了更好的选择。下面这把是只有钢材刀体,供消费者买来自己DIY配刀把。

AUS-6/8/10

AUS系列不锈钢钢材来自日本。AUS-6硬度HRC为55-57, AUS-8硬度HRC为57-59, AUS-10硬度HRC为58-60。AUS-6十分廉价,质量不高,需要经常打磨,基本很难在市场上找到AUS-6制成的厨刀。

AUS-8作为中端钢材,在价格,硬度,耐腐蚀性等方面找到了平衡。防锈,抗腐蚀能力比440C都强一些。下面两边厨刀都是AUS-8的钢材。
