我去吃过蛮多次 Olive Garden 了(一间平价意式餐厅),但它菜单上的意大利面我还是只认识 spaghetti 、 penne 、 lasagne 。遇到不认识的面,我要么不点,要么就用万能词汇 this & that 。说起来还真是不好意思,所以我回家赶快来学习各种意大利面,这样下次就能装……啊不是,就能点些好吃的餐啦。
长意大利面 Long Pasta
下面我找来了很多 YouTube 视频,一方面是让大家更直观地看到这些面长什么样、怎么做、怎么搭配,另一方面就是让大家知道这些意大利语单词如何发音……
先从大家最熟悉的 spaghetti 和跟它长得很像、看起来就是一家人的面开始。
细面 Spaghetti / Angel Hair / Capellini
Spaghetti 是意大利细面,最常见最广为人知的意大利面,跟番茄调味的酱最搭配。 Angel Hair/Capellini 是比 spaghetti 更细的面,纤细程度类似我们的面线。搭配没那么浓郁的酱汁,番茄酱或奶酱都可以,但是要稀薄一点的,或者清汤也可以。
吸管面 Bucatini
Bucatini 是吸管面,比 spaghetti 粗一点,但里面是空心的。由于它空心的结构,可以吸附更多酱汁,所以搭配清爽的酱汁,这样不会太腻。

宽扁面 Fettuccine
Fettuccine 是又宽又扁的面,搭配浓郁的奶酱、番茄肉酱(bolognese)、奶油培根酱(carbonara)。
薄宽面 Tagliatelle
Tagliatelle 是跟 fettuccine 差不多、但厚度稍薄的宽面,可以和 fettuccine 互换。

窄扁面 Linguine
Linguine 是比 fettuccine 细一点的面,搭配意式青酱(pesto)。
短意大利面 Short Pasta
然后是卷卷的面,相对于长面条,我们也把他们叫 short pasta 。 Short pasta 除了可以拌酱,也可以做沙拉(本质上还是拌酱哈)。

螺旋面 Rotini

螺旋面 Fusilli
Fusilli 跟上面很像的螺旋面,肉眼基本区分不了,吃法也一样。两者的区别在于制作方法,rotini 是把直面条扭转而来,fusilli 从机器里挤出来的时候已经是螺旋形了。但因为它们太像了,所以不用在意怎么区分,反正知道它们都是螺旋形就好。
风铃面 Campanelle
Campanelle 是风铃面,campanelle 意大利语是风铃花的意思,这种面看起来也很像小铃铛,每一个都有小裙边。 Campanelle 适合搭配奶酱、芝士酱、蔬菜酱,包括豆子、南瓜都和它很搭,甚至肉酱、鱼类、番茄酱汁也可以。

通心粉 Elbows/Macaroni
Elbows/Macaroni 是最常见的通心粉。适合放在汤、炖菜里,但在美国最流行的是做成芝士通心粉(即 Mac n’ Cheese),餐馆会用下面的 cellentani,看起来更 fancy 。广东香港一带有用鸡高汤煮通心粉的做法,加上火腿粒、玉米粒、青豆,这些食材是我们冰箱里常备菜,煮起来又很快速方便,是我小时候的 comfort food 。
短管通心粉 Ditalini
Ditalini: 短管通心粉,用来做成汤。蔬菜汤、番茄汤、豆子汤都适合。老外的汤是果腹的,所以会放米面等主食,吃了有饱腹感。小小粒的也适合做成沙拉。

特粗通心粉 Cannelloni
Cannelloni 是特别粗的通心粉,像一个空心的圆柱体。通常做法是在里面塞东西,淋上酱,烤。自己在家做特别麻烦,塞东西那个步骤烦死人。其实意大利人会用 lasagna,就是千层面的那种面片,铺上填料,卷起来成圆筒形,然后淋上酱,烤。在美国,Barilla 牌意面叫它 manicotti;在意大利 manicotti 不属于意大利面,而是 crepe 。

贝壳面 Conchiglie
